Veggie Soup With Shreds

Is a soup supposed to be blended? I know there are so many types of soups (just look at how many French terms are for soup: bouillon, consommé, velouté, moulinée, bisque, potage, vichyssoise…only to name a few) and still this question has been bugging me for quite a while. Ever since I started blogging I’ve stumbled upon so many delicious soups and most of them where indeed blended.

I grew up with two types of soups: clear soups and creamy soups. My mom used to cook three types of creamy soups: mushroom soup, mixed-fruit soup and tomato soup, all the others were clear soups. We didn’t eat creamy soups as often as clear soups and that might be the reason why today I still prefer the latter.

Soup has almost never been the only dish of a meal, it was always the first course followed by the more satisfying second course. So after eating soup I still needed to keep my tummy ready for the second course. That was not always possible because I would sometimes like it so much that I would end up eating soup for two and declared myself full. However that has never been the case with a creamy soup because after only one serving I felt like I couldn’t eat anything more. Bottom line, till this day blended soup still remains a full meal by itself to me.

Ingredients

  • • 3 carrots – sliced
  • • ½ green kohlrabi – julienned (save some for garnish)
  • • 1 onion ( I used it whole so I could remove it before serving, but you can chop it as well)
  • • A bunch of fresh flat-leaf parsley – coarsely chopped (put some sprigs aside for the final garnish)
  • • 150 g green peas
  • • 2 – 2.3 l vegetable stock –optional (can be replaced with water)
  • • Salt-to taste
  • • 1 medium egg
  • • 135 g (4 heaping Tbsp) flour
  • • Fresh yoghurt to go with the soup on a hot summer day - optional

Directions

First you’ll need to make the shreds so that they have enough time to dry before tossed into the soup. Place the flour on a working surface. Add about 2/3 tsp of salt and crack an egg on top. Start mixing with your fingers, then use your hands to form into a ball of dough. Work the dough until it reaches a homogeneous consistency.

Place a fairly large clean and dry dishtowel on the working surface or any spare table you might have in a dry area of your home.

Grate the dough over the towel using the big grating slots. Make sure you don’t grate too much dough over the same place as the shreds should be as evenly distributed on the towel as possible. Make sure they don’t end up sticking to each other and forming little “mountains” of shredded dough. Also you should always have only one layer of shredded dough on your towel so it’s better to use two dishtowels if necessary.

Let the shreds dry for ½ - 1 hour. Speed up the process by turning the shreds on their other side with your fingers after a while.

Fill a 3 – 3 ½ l pot 2/3 full with water or vegetable stock. Add salt, cover the pot and bring to a boil. Add carrot slices and onion. Let it boil on medium heat for 10 minutes.

Add the matches of kohlrabi, stir and let it boil for another 5 minutes. Taste for salt and add more if necessary. Toss in the green peas and the shreds. Give it a stir, bring to a boil and continue boiling for 3 minutes.

Remove from the flame, remove the onion (only if you used it whole), toss in the chopped parsley and stir. Cover the pot at let it rest for a few minutes before serving.

Plate, garnish with raw kohlrabi and parsley leaves. Serve warm.

When it’s hot and sunny outside I usually serve it lukewarm along with a glass of refreshing yoghurt or buttermilk.

    I love to have it as a starter for diner, but a main for lunch! I grew up with blended soups, but lately I have been drawn more to the clear one with the bits floating in. Yours looks very much the business. As it is winter now, we have soup more often than my family like - but that’s my choice not theirs! Cruel but true.

    mmm…looks yummy. i’ve never really considered your question before, but i suppose that when a soup is chunky, i eat it as a meal, and when it’s blended, i usually just consider it an appetizer. interesting.

    I usually have only soup for dinner. I prefer to have a bigger lunch and then eat light at night. I prefer creamy soups with maybe some spinachs or beans, I’m quite a picky soup eater.

    For me it depends on whether or not I’m sick. If I’m well, I like my soup blended and creamy. When I’m sick, I need my chunky chicken vegetable soup.

    I eat a blended lentil soup that is just delicious! Its lentils that are boiled in chicken(or veg) stock along with carrots, celery, and onion. Once the lentils are soft, you take half the soup and blend it with milk to make it creamy. Then you mix that with the rest of the unblended mix so it has some chunks but is still creamy. Its sooooo good, I eat it for lunch and it has enough protein to keep me satisfied.

    Now that is one healthy soup alright! The “shreds” in the title kind of threw me off until I actually got through the recipe. As for my own soup preference, most of the soups I ate while growing up were Greek soups and as such were pretty much meals in themselves. From creamy avgolemono soups to chickpea or lentil or black-eyed bean soups, Greek soups tend to be quite hearty and filling. Which is not to say that I don’t appreciate starter soups, I most certainly do, especially ones with “shreds”! :)

    where i come fr the soup is part of the many dishes on the table. As a Malay, we would have rice and few dishes whc normally comprises of 1-2 kind of meat, 1-2 kind of veggies and somthing soupy (clear soup) which we add to the rice so its easier to eat.

    One day i would post the typical Malay spread. ;)

    As much as I hate to admit this as an adult, but I still cringe at bowls of vegetables. That’s why I actually like a blended vegetable soups. That way there is a uniform texture and no one particular flavor stands out. Does that make me weird?

    (Actually, there is probably a long list of other things that make me weird. My soup preferences will just have to get in line.)
