Spinach Mushroom Stuffed Puff Pastry
Craving something savoury? How about if it comes in a crunchy package? Give me a sec, I might just have an idea
Here goes…
Ingredients ( yields 8 )
- 800 g puff pastry – store-bought
- 400 g canned mushrooms (or 230 g drained)
- 225 g minced spinach – frozen (this recipe was made a while ago when fresh spinach wasn’t available yet, but you can use fresh as well)
- 175 ml milk
- 3 small garlic cloves
- 225 g mashed potatoes (made from oven baked potatoes) – about 5 heaping Tbsp
- 1-2 tsp caraway seeds
- 1 egg yolk – for the egg wash
- Salt – to taste
- Freshly ground black pepper – to taste
Directions
Defrost the spinach, squeeze out/drain some of the water and make sure the puff pastry will be ready to handle by the time you finish making the filling.
Slice up the garlic into thin slices. Toss the spinach and the garlic in a heavy-bottomed pot, then pour in the milk. Season with salt and pepper.
Bring to a boil and cook on low heat for about 6-7 min with the pan uncovered. Stir occasionally. Toss in the warm mashed potatoes. Stir with a wooden spoon. Test taste and adjust seasoning if necessary.
Cook for another 1-2 minutes. If at this point the filling seems too runny, you can add 1 Tbsp of flour (stir and cook for a couple of minutes more) to make it thicker.
Remove from the heat and set aside to cool.
Drain and slice the mushrooms. Sprinkle with salt and pepper, mix well and set aside allowing seasonings to infuse.
Now let’s get to the puff pastry. Sprinkle some caraway seeds on a floured working surface and roll the dough sheet just a bit thinner than it comes in the package, just enough for the caraway seeds to pierce the dough and become part of the sheet.
Cut the sheet into 15 cm squares. Draw an imaginary diagonal on each square and apply the filling to only one of the two imaginary triangles forming the square. Add a layer of the spinach filling (don’t make it too thick) being careful not to cover the entire triangle with the filling as you’ll still need about 1 – 1 ½ cm of uncovered dough around the edges. Arrange one layer of mushroom slices on top of the spinach filling.
Apply a little bit of water around the edges of each square, fold over to obtain a triangle and press down with a fork to make sure the filling is sealed.
Line your pizza/ crisp plate with microwave safe parchment paper. Transfer triangles to the plate.
Brush with egg wash.
Microwave 2 triangles at a time on 500 W for 16 minutes, then on 750 W for 2 minutes and on crisp for 3-4 minutes.
I haven’t baked these in the oven but if you would like to give it a try, I believe 30-35 minutes (or until top becomes golden brown) at 180 degrees C should be enough.
Let them cool for 5-10 minutes before serving.

i know i can eat at least 6 of those! i prefer savoury to sweet so this one would go down pretty easy. add some chicken and il be having them for breakfast, lunch, tea, dinner and supper!

it looks awesome and sounds healthy(even if it’s a puff pastry). i think Calories shouldn’t count if there’s a lot of vegetables in a recipe.
I LOVE puff pastry. It’s just a shame it’s so fattening, but no worries, this is definitely something to try on my “treat” days.
