Spicy Bruschetta/ Crostini Base/ Croutons

Wednesday, 25 June 2008 by Lore

You must all know by now I very much like to come up with easy-peasy recipes. This is definitely one of them and its also my contribution to the Original Recipes Round-up I’m hosting on Culinarty. Would you like to join the fun of experimenting and coming up with your own concoction? You can find the details here. Deadline is on July 13th.

Now on to the flavourful Crostini base (slash Bruschetta base, slash croutons, slash appetizer base…Yay, I’ve just come up with another way of putting this recipe to use. Your turn :) )

Ingredients

  • • 150 g/ 5.3 oz bread flour
  • • 1 medium egg
  • • 1 egg white
  • • 280 ml/9.5 fl oz milk
  • • Salt – to taste (I used about 2/3 tsp of salt)
  • • 4 ½ Tbsp chopped, dry parsley leaves
  • • 1 Tbsp sweet paprika
  • • 1 Tbsp mild-hot paprika (If you’re planning on using hot paprika please remember that a small quantity goes a long way and use less than 1 tsp)
  • • ½ Tbsp dry oregano
  • • ½ Tbsp dry ginger
  • • 3 Tbsp EVOO (extra virgin olive oil)
  • • 10 g/ 0.35 oz baking powder

Directions

Mix all the dry ingredients together (except for the salt) and set aside. In a different mixing bowl, mix well all the wet ingredients as well, then add the salt to the dry ingredients. Toss in the dry ingredients over the wet ingredients and mix well using a spatula.

I baked these in the microwave oven so I used 3 silicone-coated parchment paper (microwave safe) molds I made myself. They had a square base of 8 cm/ 3.15 inch the side and a height of 12 cm/ 4 ¾ inches.

If you’re going to give these a try and bake them in the classic oven, you can use metallic molds. However, do not use those in the microwave because they are not microwave safe.

Line the microwave’s pizza/crisp plate with microwave safe silicone-coated parchment paper. Put the empty molds on the plate as close to each other as possible, then pour 1/3 of the batter into each mold.

Microwave for 18 minutes on 750 W, then carefully remove the molds and slice up the content. Arrange the slices on the lined pizza/crisp plate and microwave for 3 minutes on “crisp”. Then turn the slices on the other side and microwave for another 3 minutes on “crisp”.

Enjoy as is, as a crostini or a bruschetta base. You can also cut them into crouton dice and serve along with your favourite soup :D

First, the colour’s awesome. Second, the concept is so novel and thirdly, a reverse bruschetta is merely required…top with just one or two quality ingredients and it’s magic.

They look beautiful! Completely changes my notions that all food done in a microwave is asty and in ugly black containers.

Peter - Thanks! I took your advice and must tell you it was heavenly with only a tomato slice and some crumbled Feta.

Dhanggit - Please try it, you’ll never be able to imagine your world without it :D Yes it arrived safely, thanks for asking. My mom is the best, her packaging skills are impeccable so the currants and cherries looked like the were picked one hour before…and that without any ice :)

    Ann - Thank you!

Kim - You’re very welcome! Let me know how they turned out sometime, okay?

Hetal - Glad you like it :D

Ivy - Sure, you can bake them in the oven. Since mine is broken, I had to manage without it so I used the microwave.

Hetal - It was such a lovely surprise! Thank you :D

Jeff - I used to believe the same thing :) but since I’ve done quite some baking in the microwave I completely changed my opinion.

Deborah and Katerina - Thank you!

Cathy - Thanks and hope you can participate :)

Rajani - It was even better thanks to the ginger ;)

Hélène - You could join the fun if you like the idea :D

Grace - The colours were indeed so vivid and powerful.

Gloria - Welcome :) and I’m glad you like what you see here. Thank you!

Clumbsy Cookie - Thanks and please come by anytime :)

Stacy - Glad you like them, I’ll send some over ;)

Retno - You should give them a try sometime, they’re SO easy to make and the taste is INCREDIBLE! Thanks for your DELICIOUS entry :)

Kevin, Annestrawberry, Emiline, Bakingblonde and Pam - Just give them a try and your world will never be the same :D.

Nags - Welcome and thanks, hope to see you more often :)

Cookingpanda, Mimi and Ranjani - Glad you liked it!

Maya - It’s good to see you here :)

Ashley - Thanks, this is kind of a bruschetta on steroids :D

Sam - Nice to see you liked them :) The good thing is they go down as quickly as they’re made. You can’t say that for many recipes, can you?
