Savoury biscuits/ cookies

Here they are, for your snacking pleasure :)

Ingredients

  • • 420 g pastry flour
  • • 190 g smoked hard yellow cheese of your choice – grated
  • • 2 medium eggs + 1 egg for the egg wash
  • • 200 g unsalted butter – icy cold
  • • 3 small baked potatoes – use a fork or a potato ricer to get about 12 Tbsp of mashed potatoes
  • • 3 Tbsp sour cream
  • • 1 tsp ground nutmeg (didn’t have whole nutmeg so I used store bought ground nutmeg which is less flavourful than the freshly grated nutmeg. Use the “real thing” if you have it in your pantry)
  • • 1 ½ tsp baking powder
  • • 3 tsp salt
  • • 3 Tbsp sweet paprika – optional
  • • You can sprinkle coarse salt, Cayenne or both on top of the biscuits. You can also press caraway seeds or strips of green chili pepper into the leaf of dough. If you’re adding paprika to the dough sprinkling some coarse salt will be more than enough because the biscuit is pretty flavourful already.

Since this is another concoction born out of my permanent savoury craving, I’m sending it to the Original Recipes Round-Up that has now become a monthly event. Directions

In a large mixing bowl (made of plastic if possible) mix together flour, baking powder, nutmeg and paprika (if using). Toss in mashed potatoes and grated cheese. Add salt and cut in the butter with your fingers or a pastry cutter until a crumbly texture.

Lightly beat the 2 eggs and pour into the mixing bowl then add the sour cream. Mix to form a ball. Don’t overwork the dough.

Shape into a flat rectangle, wrap and chill for at least 3 hours before rolling.

Roll out dough (sprinkle with flour if necessary) to ½ cm thick on a floured surface and cut into discs and other shapes. Chill dough that hasn’t been rolled out yet.

Place the biscuits onto the microwave safe parchment-lined pizza/crisp plate, leaving 1 ½ cm between them. Apply egg wash and sprinklings.

I’ve baked a dozen at a time by microwaving them for 6 minutes at 650W, then 3-4 minutes at 500W and 2 minutes on crisp. Please note that baking time will change according to the number of biscuits on the plate.

They are best the same day.

Update: I’ve just come across an event hosted by Aparna called Think Spice, Think Nutmeg, Sunita’s brain child. Nutmeg is one of those spices I don’t use as often as I’d like in my cooking or baking so and I’m trying to find new ways to include it. This is one of them so I’m sending it to the lovely Aparna.
