Red Cabbage Frugal Dinner And 2 Excellent Awards

Here’s the recipe of this vivid frugal dinner although I can’t really call it a recipe since it lacks precise quatities but that’s because I always change them based on mood. Believe me when I tell you that you cannot go wrong with this one, there’s no way you could mess this up if you manage not to burn the cabbage :)

Ingredients (serves 3)

  • • ½ small head red cabbage
  • • 1-2 Tbsp grape seed oil
  • • 1 cup of water
  • • A few green olives
  • • A few red grapes
  • • Some organic walnuts
  • • 100 g Emmentaler
  • • The juice of half a lime
  • • The juice of half a pink grapefruit
  • • Salt – to taste
  • • Some fresh dill

Directions

Slice the cabbage after discarding its core. If you own a Pyrex and a compact cast iron flame-tamer simply place the flame-tamer between the burner and the bottom of the Pyrex, drizzle the oil and toss in the red cabbage, season with salt, pour in the water and cover. Otherwise I think you could use your Dutch oven. Cook for about 20 minutes on low heat or until the cabbage softens a bit and doesn’t become too mushy. If during cooking time there’s no water left on the bottom of the Pyrex just add some hot water. Remove from heat and drain well.

Now its time to mix lime and grapefruit juices. Place red cabbage on the dish and drizzle the juice mix over. You’ll get that cute pink colour anywhere the juice mix touches the red cabbage so just play around until the dish looks vivid enough for you :)

Toss over some olives, grapes, walnuts and dill. Slice the Emmentaler and cut into cute shapes then place over the dish.

That’s all there is to it. It became quite a staple in our house because it doesn’t require much preparation time, it’s light so it makes a great change after days of rich dinners.

Now, on to the award.

I cannot believe it’s been almost a month and a half since Joy made my day and awarded my blog with “E” from Excellent! Then another “E” was yet to come my way this time from Paradis. It might not seem like such a surprise to you. No, not me receiving the award, but Joy and Paradis making my day, after all their names should have been a tip for what’s about to come.

Time flies so fast lately and it becomes hard keeping track of it but that’s not the only reason for the postponed announcement. This award requires that we show our appreciation by giving it to 10 other EXCELLENT blogs, so I wanted to take my time and not rush into giving these awards right away. Then it came the domain change and other day-to-day stuff that I wasn’t able to postpone. Still, this day finally came and I’m really excited about it because hopefully the 10 bloggers I’ve picked will have a better day thanks to the “E” word :)

  1. Gattina from Kitchen Unplugged is back from New Jersey kicking ass with her great photography. Her dishes? Pure art! She has a great way of combining colours, her photos are just incredibly amazing.
  2. Rosie from Rosie Bakes A “Peace” Of Cake is such a great blogger and community maker! Her dessert ideas are just endless and she has managed to tempt me into becoming a sweet dessert fan and forget about my savoury preferences.
  3. You must all know Peabody by now, right? I’m pretty sure Culinary Concotions by Peabody has already been awarded with “E” from Excellent. But just to be sure ;)
  4. I know that Helen aka Tartelette already has some “E” awards hanging on her kitchen walls but I too wanted to let her know I believe her blog is Excellent.
  5. Kim from A Yankee In A Southern Kitchen has only been blogging since february but she already has quite a display of fine recipes.
  6. I’ve recently discovered Andrea’s site and that was all it took for me to keep browsing through her delicious recipes over and over again.
  7. Was I speaking of art cuisine? Here’s another one for you: No Recipes. Marc’s dishes are always elegant and you’ll love the way he combines their ingredients.
  8. Emiline from Visions Of Sugar Plum always gets very creative with her recipes. Now, she’s back on track after her gone wild oven got fixed a few days ago. Do you have a sweet tooth? If so, I bet you’ll love her site.
  9. Mari from Mevrouw Cupcake bakes some pretty delicious and detailed-oriented posts. I know I can always count on her directions for being all I need to know.
  10. I know I’m going to raise some eyebrows with my next statement but believe it or not I’ve only recently discovered Smitten Kitchen. Judging by the number of food blogs out there who take their inspiration from the recipes Deb posts on her site, I believe there’s nothing new for me to say that you wouldn’t know about. So go out there and check her latest photos and posts.

I bet these yummy links will keep you busy for a couple of hours and that you’ll rush into your kitchen right after that :)

    Retno - I really enjoy vivid dishes and Julie once said that the more vivid the color of the food the higher the vitamin content so I guess my body is asking for the right stuff (every now and then :) )
