I’ve got two important things on my mind right now. The first one is to announce the lucky winner of our giveaway. I really loved reading about your most valuable kitchen tools! As you probably already know, the prize was Lou Manna’s incredible Digital Food Photography book, a great guide for this word of tasting with the eyes. The randomly generated comment was Eileen’s!!! The second thing I got on my mind is FOOD….good food! Were could one find delicious and original dishes you might ask :P . Lucky for you, you’ll find in this post a yummy list to choose from. What a coincidence, right? ;)

Suzyq - Chilli Lime Curd

"I have been making this for a while. It’s delicious on bread or toast. Here in Thailand limes are far more common than lemons, and give a tarter flavour. The stirring is the most important thing. The exact quantities are not so important. I recently started to add a little (a pinch) chilli powder, and this gives the spread extra zing.

If you make scrambled eggs in the microwave, this is much the same idea, hence the importance of frequent regular stirring!

Ingredients:

  • 5 - 6 tablespoons lime juice
  • 3 large eggs
  • 200g sugar
  • 100g butter
  • (optional chilli powder to taste)

Put the butter in a large microwavable bowl. Soften the butter in the microwave. Add all the other ingredients and mix with a wire whisk. Microwave for about 2 minutes, and whisk again. Then microwave for one minute periods (whisking between) until the mixture starts to thicken around the edges.

Then continue alternating microwaving for 15 seconds and whisking until the mixture is all thickened.

Pour into clean glass jars, and put jars in the microwave for a final 30 seconds to set. Cover and cool.

This will keep in the fridge for a few weeks. (In our house it is always consumed long before the time expires!)"
