Mango Ginger Salad

Today’s recipe is a simple yet flavourful salad that goes quite well with roasted chicken.

Ingredients

  • 1 ripe mango
  • 1 apple (Golden)
  • 3 ½ Tbsp grapeseed oil
  • 1 ½ Tbsp orange nectar
  • 3 Tbsp lemon juice
  • 1 Tbsp acacia honey
  • 1 tsp freshly grated ginger (or more if you like)
  • 20 g Brie - optional
  • Parsley sprigs – for garnish

Directions

First you need to make the dressing so that the flavours have time to combine before pouring it over the salad. Mix together finely grated ginger, grapeseed oil, 1 Tbsp lemon juice, orange nectar and honey. Set aside.

Wash the mango, the apple and the parsley leaves. Peel the mango and cut both the mango and the apple into sticks. Drizzle 2 Tbsp of lemon juice over the apple sticks. The citric acid from the lemon juice will prevent your apple from turning brown.

Arrange the fruit sticks on your serving plate and spoon over the dressing. Cut the Brie into small pieces and sprinkle over your salad. Garnish with some parsley sprigs and serve.

    Muslims are fasting in the Holy month of Ramadan nowadays… its so hot here and I’m always on the lookout for interesting and refreshing new salads that we can use to break our fast. Hmm, mango season in Pakistan is almost over. But this is a great recipe. Will do for next year!
