Flax seed little breads
Ingredients for 10 little breads
- • ½ cup + 7 heaping spoons of flour (that’s a total of aprox. 1 ½ cup of flour according to mom
) - • Salt – to taste (about 1 ½ tsp should suffice)
- • 8 Tsp milk
- • 1 tsp baking powder
- • 2 egg whites
- • 100 g/ 3.5 oz farmers’ cheese
- • 100 g/ 3.5 fresh mozzarella cheese – mashed with a fork
- • 3 heaping tsp of sour cream
- • 2 Tbsp brown flax seeds
- • 2 Tbsp chopped fresh dill
- • Freshly ground pepper mix (white,black,green,red)-to taste
- • 1 egg yolk
Directions
Mix togheter flour and baking powder. Use another mixing bowl to combine all the other ingredients (except for the egg yolk).
As far as flax seeds go they have a very high lignans and Omega-3 content. Lignans are good for the heart and possess anti-cancer properties, while Omega-3s are helpful in lowering your cholesterol and reduce the risk of heart attacks.
Flax seeds come in two main variaties: brown and yellow. I always use brown seeds and have a good reason for that. There’s type of a yellow flax seed called Linola that is extremely low in Omega-3. Since I cannot distinguish between different kinds of yellow flax seeds I always choose the brown variety to make sure I’m not stuck with Linola.
Toss in the first bowl’s content and mix to form a ball. Don’t overwork the dough. Wrap it up in cling-film and refrigerate for about ½ hour.
Flour your palms and form 10 little balls out of the dough. Mix the egg yolk with 2 Tbsp of water and use the mix to brush the little breads.
Bake on silicone-coated baking paper, on the middle rack of a preheated oven for about 30 minutes (medium heat) or until the mini-breads pass the toothpick test.
I’ve bake these in the microwave (on the pizza/crisp plate for 16 minutes on 650W, 5 minutes on 750W, 2 ½ minutes on 650W and 2 minutes on crisp) not because I have a MO fetish but because I had too. I was not going to miss Chris’s Event: Cooking to combat cancer just because my classic oven was down and out again. My classic oven’s mood makes me experiment different recipes in my microwave oven and I’m happy to report that I’m getting the hang of it.
I asked mom to come to the rescue. I gave her the recipe and asked her to report back when she has established the baking time for a classic oven.
But like mother, like daughter… We cannot stick to a recipe even if we try too. She tried hard this time and the only thing she changed was to substitute farmers’ cheese for the mozzarella, so she used a total of 200 g/ 7 oz farmers’ cheese.
While speaking to mom, I realized she got some really fluffy breads out of the dough while my mini-breads had a slight crunchy texture, surely due to the different ovens we used (and partly to the mozzarella – farmers’ cheese substitution and the fact that mom used ground flax seeds). Still that’s great news because you can adapt it to your cravings.
Also mom said they nearly doubled their size, while mine did not come out as big.
