Cocoa Tartlets Filled With Pink Grapefruit Buttermilk Cream

…and topped with blackcurrants. Sorry, not very good with titles :)

Let me start over again: these are to die for!!! Can’t wait to make them again. They were incredibly refreshing thanks to the buttermilk, blackcurrants and pink grapefruit (which is btw my favourite citrus ever). The citrus sourness of the grapefruit was incredibly tasty when paired with the fruity sourness of blackcurrants. I was also blown away by how well the pink grapefruit’s slight bitterness went with the cocoa’s natural bitterness. I don’t want to give you guys the wrong impression: the tartlets were not bitter, there was only a dusty trace of a slight bitterness, just enough to make them even more delicious. If I were to give harmony a definition, this recipe would be it.

Ingredients

Tartlets

  • 200 g finely crumbled cocoa biscuits/cookies
  • 165 g flour ( I used bread flour - not ideal, I know - because I was out of all other flours)
  • 100 g brown sugar
  • 7 g baking powder
  • 60 ml fresh squeezed pink grapefruit juice
  • 60 g finely chopped walnuts
  • 15 g organic cocoa powder
  • 1 medium egg
  • 100 g unsalted butter - icy cold

Filling cream

  • 470 g fresh buttermilk (2% fat)
  • 2 egg yolks
  • 35 g corn starch
  • 12 g vanilla sugar
  • 155 g sugar
  • 70 ml fresh squeezed pink grapefruit juice
  • 3-4 tsp pink grapefruit pulp
  • A pinch of cardamom

Blackcurrants

  • For fewer blackcurants you’ll need about 7-8 Tbsp fresh blackcurrants
  • If you too are the number one blackcurrant fan (like I am ;) ) you need about 15 -16 Tbsp of currants

Directions

Toss in flour, cocoa powder and crumbled cocoa biscuits/cookies in a deep glass bowl. Stir with a wooden spoon. Cut in the butter with your fingers or a pastry cutter until a crumbly texture. Toss in chopped walnuts and sugar. Mix with your fingers until they are evenly distributed.

Make a well in the center. Crack the egg into the well, sprinkle the baking powder over the egg, then pour over the grapefruit juice. Mix with your hands to form a ball that holds together nicely.

Shape into a rectangle, wrap in cling film and chill for 1 ¼ hour.

Transfer dough to a floured surface and roll out to ½ cm thick. Cut into disc shapes using a cookie cutter or the trim of a cup. I wanted to get 9 cm diameter discs. Refrigerate extra dough until rolling it out.

To shape and prepare the tartlets for baking just follow the tutorial you can find on my Vanilla Tartlets with Mango and Orange Jam post the only difference is that this time I also placed microwave safe parchment paper with rice on inside each tartlet and I lined the crisp plate using the same kind of parchment paper. Bake 6 tartlets at a time for 7 minutes on 500 W then for 2 minutes on crisp. Please keep in mind that I’ve only baked these in the microwave oven.

Using a flat wooden spoon gently transfer them onto a cooling rack (they’ll firm up more as they start to cool). Remove paper and rice.

To make the filling cream, combine sugar, starch, vanilla sugar in a heavy-bottomed pan. Toss in the egg yolks and stir with a wooden spoon. Pour in the buttermilk, grapefruit juice and give it another stir then place a flame-tamer between the burner and the bottom of your pan. Cook on medium-low heat (stirring all the way) until your cream gets as thick as a pudding (it should take about 14-15 minutes). Add the grapefruit pulp and a sprinkling of cardamom just before the desired thickness is obtained and stir. Remove from heat and set aside to cool.

If you really, really adore blackcurrants sprinkle ½ Tbsp of currants inside each tartelet, otherwise you’ll only use the blackcurrants to top the tartlets once they are filled.

Pour the filling cream inside each tartlet then top with ½ Tbsp blackcurrants per tartlet.

Prepare your palates and enjoy the harmony!

Update: Good thing I dropped by Susan’s place because I almost forgot she’s hosting SHF this month, an event created by Jennifer.     Olga’s is actually a restaurant from Illionois that I went to all the time with my Mom when I was little. (The one in Austin, Tx, not up north.) They served olga sandwiches, which was this flat thick bread that had a sweet twang to it. It’s the strangest bread in the world. They would serve them with turkey and cheese, beef and lamb, ham and cheese, etc. I have no idea why they’re called olgas, but they’re good. I pulled my recipe off the Internet, so I doubt it’s accurate. But besides ordering them from the company, it’s the closest thing I got to Olgas until they bring them back to Texas!
