Cheese Tuna Stuffed Tomatoes

Do you like summer? I’ll be frank with you: I hate it! I think what I hate the most is that it’s getting hotter and hotter every year. I certainly don’t remember having such high temperatures when I was a kid and even as a kid I always liked winter better. If bears hibernate in the winter well I hibernate in the summer. I even consider having a counter for a count down till winter on my desktop… My whole energy is fading because of the hot and muggy weather.

Could it be that I’m grumpy today? The little fellow on my shoulder just threw me a “rolling eyes” face and a “d’oh”. Do I have a cure? Always! :) Just thinking about this light refreshing appetizer makes the heat more bearable.

Ingredients

  • • 4 medium tomatoes – cored and seeded
  • • 125 g farmers’ cheese
  • • 1 Tbsp of chopped fresh dill
  • • 12 Emmentaler sticks
  • • 1 small can (80 g) tuna – in water
  • • 1 hard boiled egg – sliced
  • • 1 scallion – finely chopped (greens only)
  • • Cayenne – to taste
  • • Salt – to taste

Directions

Mix together farmers’ cheese, chopped dill, scallion and tuna. Add some water from the can if you’d like the filling to be more on the creamy side.

Taste and sprinkle with as much salt as you like. Mix well.

Stuff each tomato with a layer of cheese filling, add an egg slice, sprinkle with cayenne and repeat until the tomato is completely stuffed.

Pierce 3 Emmentaler sticks into each stuffed tomato and garnish with some dill sprigs on top.

C’est tout, easy and refreshing!

I wanted to add some chopped green olives to the cheese mixture and I forgot (yes, I blame the heat), but you could add some if you’d like. You can also add small Emmentaler dice in the filling….the possibilities are endless :)

Grace is starting the Beat The Heat war so I decided to enroll for battle (someone please find me a helmet that won’t keep falling on the side and cover my right eye…I look like such a dork! ;) ). Forget about the hard boiled egg (as this is a no heating appliances event) and you’ll get yourself a decent weapon against the heat.

  6. Lore… you used Farmer’s Cheese! That’s a BIG deal to me. I always feel like no one has even ever heard of it, let alone use it for cooking. I just fell in love with you ;)

    Great idea for the event(s). They all sound like they fit perfectly. I’ll see what I can about getting you a helmet too.

    Where abouts do you live? Summer is hot everywhere, but I figure you must be further south than some of us.

  7. Like you, I hated the summer as a child because I didn’t like to sweat. However these days, I live for summer… especially after experiencing Chicago winters. :) Your stuffed tomatoes look beautiful, healthy and so colorful! The presentation is gorgeous - great job!

    I definitely have more energy as well in the Winter. What I do like in the Summer is not the oppressive heat (could pass on that one) but the fruits and varied salads I get to eat. Your stuffed tomato salad looks tasty and so simple. Great recipe!

    I hate Ohio’s summers, they are so hot and humid. But I love Mexico City’s summers, they are cool and it storms every single day. Oh what a beautiful season to be down there. However, this year here in Ohio hasn’t been too bad. I haven’t turn on the A/C in one week! (knock on wood)
    The best part of the summers over here is the abundance of fresh vegetables. That’s the only thing that makes it bearable for me :)

    You poor thing, most people like summer. I always like summer because I don’t have to worry to nag my son about his school stuff. I do agree about the weather, though it’s nice and still (sometimes) chilly here in Northern CA.
    Hey your recipe is fun for entertaining, what if I use tiny tomatoes? I think it will make a good presentation for an appetizer.
