Cauliflower With Sour Cream Carrot Sauce

I don’t know about you but I could eat cauliflower no matter the cooking method boiled/steamed/grilled…you name it! I tend to eat it as is and forget all about sauces that’s how much I like it. Still there’s no need to worry because today’s recipe is not going to be about plain cauliflower but more about a creamy proposition :) .

cauliflower with sour cream carrot sauce

Ingredients

  • ½ medium-small cauliflower
  • ½ green kohlrabi
  • 2 Tbsp low fat sour cream
  • 2 medium carrots
  • 2 tsp dried green onion
  • ½ tsp caraway seeds - coarsely ground
  • 2/3 tsp freshly grated ginger
  • 1 Tbsp of finely chopped fresh dill
  • a few dill sprigs
  • 5 Tbsp Feta – grated
  • 2 Tbsp organic carrot juice
  • Salt – to taste

Directions

Add some salted water to a small saucepan and bring the water to a boil. Trim and peel the kohlrabi, then cut it into sticks. Add the sticks to the boiling water and cook, partially covered, for 10 minutes. Drain.

To make the carrot purée, take a second saucepan, add salted water and bring to a boil. Wash and peel the carrots, cut them into 8 cm segments, then toss them in the boiling water. Return to boil and cook, partially covered, for 12 minutes. Drain then mash them with a fork to obtain a purée.

Remove the outer leaves from the cauliflower, wash then cut into small florets. Bring a pot of water to a boil, add some salt, toss in the cauliflower florets, return to boil and cook for 5-6 minutes (cooking time will depend on the size of the florets). Drain well and set aside to cool for a couple of minutes.

To make the sauce simply mix together 3Tbsp of the carrot purée with the sour cream, grated ginger, 3 Tbsp of grated Feta, caraway seeds, dried green onion, chopped dill and carrot juice. Taste and season with salt if necessary (I didn’t even need to add more salt because my Feta was quite salty).

Plate the cauliflower florets and kohlrabi sticks then spoon the sauce over them. Sprinkle with the remaining Feta and garnish with dill sprigs.

    • Yep creamy does mean confort to me! Do you love cauliflower in every way? Ever tried it covered in chocolate? I had to do that for a restaurant once, dipping toons of raw cauliflower in chocolate… Strange.

    Some people think that this beautiful floret is bland. I totally disagree, like you, I can eat this raw or cook. I like the addition of sour cream for your recipe. I really like the first photo on this post. Cheers.

  10. cauliflower is such an underrated veggie, it’s tragic. i can’t wait for it to come into season here. i usually just roast it at high heat with some onions, but maybe this will motivate me to dress it up a little more.

    This looks super delicious.
    Never done this way with kolabari.
    I make them withcheese sauce topped with more cheese when i put it in the oven.
    Bad luck is only i like cailiflower, both hubby and daughter hate it.
