Cauliflower Patties With Feta And Mushrooms

Like every foodie I have quite a few weaknesses and patties are in the lead of my top list. However there’s only one type of patties that make my day and these would be the crunchy-exterior-creamy-interior type. If you would ask me what’s the best savoury creamy stuff ever, I would answer “(melted) C-H-E-E-S-E!!!” without a blink. Ask me in my sleep, go back in time and ask me when I was 5 and you’ll get the exact same answer. My taste concerning cheese has never changed and never will. Why? Because cheese simply rocks and no one will convince me otherwise! I enjoy all the varieties out there but somehow prefer the taste of least processed cheese like farmers’ cheese or Feta.

Hubster however doesn’t like these varieties at all and prefers Gouda and Cheddar instead, especially when it comes to melting them into creamy heaven.
You can already guess just by looking at the title that these patties will be cooked my way. I actually made 2 versions: one for him and one for me but I’m going to share with you the version I liked the most: the yummy-melted-Feta-glued.

Why cauliflower? Because I had a cute small cauliflower in my pantry and I think it makes a great paring with anything milky-creamy.

Ingredients (for 7 patties)

  • • 5 Tbsp unbleached, all-purpose flour
  • • 1 medium egg
  • • ½ small cauliflower, previously cut into small florets
  • • 200 g/ 7 oz frozen mushrooms (but you can use fresh or canned as well) - cut into smaller pieces
  • • A handful of fresh parsley leaves – coarsely chopped
  • • 4 Tbsp crumbled Feta
  • • 70 g/ 2.5 oz bread crumbs
  • • 1 Tbsp dry green onion
  • • Salt –to taste
  • • Fresh ground black pepper – to taste
  • • Sunflower oil – for frying

Directions

First you need to prepare the mushrooms. If you’re using frozen mushrooms be sure to defrost them and squeeze out the extra juices if necessary. Cut them into smaller chunks, season with salt and pepper and mix well. Heat 2 Tbsp of sunflower oil in a small saucepot, toss in the mushrooms and the chopped parsley, stir and sauté them for a few minutes. Stir a couple of times. Remove from the heat and set aside to cool for at least 5 minutes.

Bring a pot of water to a boil, add some salt, toss in the cauliflower florets, return to boil and cook for 5-6 minutes. Drain well and set aside to cool for 3 minutes, then chop the florets into smaller pieces. I ended up with about 6 Tbsp of cooked chopped florets.

In a large mixing bowl mix together cauliflower, sautéed mushrooms, flour, egg, Feta, dry green onion. Season with salt and pepper. I didn’t add more salt as my Feta was salty enough for the entire mixture. Using your hands, form 7 patties, then coat them with bread crumbs.

In a skillet heat 1 cm/ 0.4 inch deep sunflower oil. Fry the patties on both sides until golden-brown. Remove from heat and drain on kitchen towels to absorb the extra oil. Serve immediately.
