Cauliflower-Cheese Savoury Cakes With Potato Dough
Remember my strawberry-walnut cakes with sour cream and potato dough? You are now looking at its savoury version
. I wanted to make a savoury version mostly because there was a potato dough involed that would work out nicely with a spread of cheese and sour cream (the fact that I’m a savoury addict has nothing to do with it
). Oh and by the way, you can also use this spread on your toast in the morning…I did and I loved it!
I did change a couple of things in the dough: I left out the vanilla sugar and the fructose and I added salt (not too much since the Feta in the spread was pretty salty) and chopped parsley instead.

Ingredients
- • 7 medium new potatoes
- • 300 g bread flour
- • 3 Tbsp (2 Tbsp will find their way into the dough and the remaining Tbsp will be sprinkled over the cakes) fresh curled parsley leaves – chopped (pat dry before chopping them up)
- • Half of a medium cauliflower (or one that’s really small)
- • 7 Tbsp bread crumbs
- • 25 g butter
- • 250 g low fat farmers’ cheese
- • 190 g Feta
- • 3 Tbsp sour cream (12% fat)
- • Salt – to taste
- • Ground white pepper – to taste
Directions
First you need to make the spread. Crumble the Feta and toss in the farmers’ cheese and sour cream. Using a rubber spatula, mix to combine. Cover the bowl with cling film (plastic wrap) and put it in your fridge.
Boil the potatoes. Cut the cauliflower into florets and boil them for 3-4 minutes (cooking time will depend on the size of the florets) then drain well. Once the potatoes are cooked, mash them with a fork while they’re still warm and toss them in a mixing bowl. I ended up with about 11-12 heaping Tbsp of mashed potatoes. You can boil the potatoes and the cauliflower florets in the same time (but using separate pots).
Add the flour, the 2 Tbsp of chopped parsley and some salt (I didn’t add too much salt because my Feta was pretty salty) to the bowl of mashed potatoes. Make the dough (using these four ingredients) and bake the discs as explained here.
In the meantime, melt the butter in a skillet over medium heat. Once the butter is melted, spoon the bread crumbs over the entire surface of the skillet and reduce the flame. Stir and fry until the bread crumbs darken a bit (be careful not to burn them!). Toss in the cauliflower florets and season with salt and ground white pepper. Stir gently making sure the bread crumbs stick to the florets. Remove from the heat once the florets are well coated.
All there’s left to do is to assemble the cakes. Take the spread out of your fridge and using your palms form discs out of the cheese mixture (they should have the same diameter as the dough discs). Place the cheese discs on top of the dough discs, then tastefully arrange the coated cauliflower florets on top of the cheese. Sprinkle with the remaining chopped parsley and serve.
