Butter And Honey Swiss Roll For Breakfast

You can make breakfast special by simply changing the presentation. Instead of serving butter and honey separately how about making them into a swiss roll?

Ingredients

  • • 100 g butter
  • • 60 ml polyfloral honey
  • • 1 tsp of a mix consisting of 2 ½ tsp ground cinnamon and 1 pinch of ground black cardamom powder

Directions

Take the butter out of the fridge and let it sit so that it softens a bit (don’t let it reach room temperature!)

Place a large silicone-coated parchment paper on your tempered glass cutting board. One half of the paper should cover the entire board while the other should hang down.

Place the butter on the parchment paper in the center of your cutting board, cover with the hanging half of paper. Using a rolling pin flatten the butter to a ¾ - 1 cm thick leaf. Try making the leaf as rectangular as possible.

Put the cutting board and the butter leaf in the fridge for about 10 minutes or until the butter re-hardens.

In the meantime make sure the honey and the cinnamon mix are handy.

Take both the cutting board and the butter out of the fridge. Quickly spread honey over the butter then sprinkle 1 tsp of the cinnamon mix. Now, starting from the longer side, gently start rolling the butter leaf with the aid of the parchment paper (too much touching won’t help because your palms and fingers will melt the butter too quickly). If the butter is so hard that it wouldn’t detach itself from the paper and/or roll, simply pass your palm underneath the paper and over the part with the stiff butter. That part of the butter leaf will soften a bit thanks to the temperature of your palms and will roll more easily.

Use the same paper to pack the roll up and put it in the fridge. You can slice it up for a fancy breakfast as soon as it hardens again. It will keep for at least one week if stored in the fridge.

The Think Spice… event, Sunita’s brainchild, is now one year old!!! For this anniversary edition you can choose your favourite spice (you’ve guessed it, mine is cinnamon), whip up just about anything featuring it and send it over to Sunita before the end of the month. Wishing you many more anniversaries to come, thank you for such a fun event! Sending this special swiss roll your way :)

  14. I got so excited at first glance! Then I realized it was not to shove down my gullet at lightening speed but to enjoy with biscuits and pastries. LOL! I’ve never eaten butter and honey rolls alone before, but there’s a first time for everything!
