2 Easy Spreads
I know you probably have your lazy mornings too. These 2 spreads are just perfect for those days. They give me the extra boost I need. Really, it’s as easy as that!
Pizza style toast spread
Ingredients
- • 125 g / 4.4 oz unsalted butter – room temperature
- • 2/3 cup grated mozzarella
- • 1/3 cup pimento stuffed green olives
- • Fresh ground pepper-mix (black, white, red and green) - to taste
Directions
Slice the stuffed olives and mix all the ingredients. I didn’t use salt because the olives were salted enough but that’s really up to you. So just taste the mix and if you believe it should have more salt, don’t be shy :).
Wrap it up in a plastic foil and leave it in the fridge until the next morning.
Take it out of the fridge a bit ahead of time so that it’s almost room temperature. Spread on your garlic rubbed toast. Then microwave it (on grill) for 30-40 seconds so that both butter and mozzarella are melted.
For an extra flavour, serve it with tomato slices on top.
Paprika - cheese spread
Ingredients
- • 1 finely chopped raw onion (aprox 1/4 cup)
- • 250 g / 8.8 oz cottage cheese or farmers’ cheese
- • 1 tsp of sweet paprika
- • salt – to taste
- • 80 g / 2.8 oz unsalted butter, room temperature – only if you’re using farmers cheese, otherwise you don’t need butter because the cottage cheese should be creamy enough.
Directions
Mix all together until you get a creamy-spread. Refrigerate for at least 3 hours prior to serving so that all those flavours have enough time to mix. Spread the mix on your toast.
For an extra flavour first sprinkle your toast with a few drops of extra-virgin olive oil while it’s still hot.
You can garnish it with cucumber/tomato slices, parsley leaves… you’ll know exactly what to choose when you’ll get to your frigde. On the count of three you will wake up :))
